Homemade strawberry ice creams have very little in common with any of the commercial strawberry ice creams you’ve likely tried in the past. So, let this be your reminder to churn a batch this summer and guarantee smiles from everyone.


Roasted Strawberry Ice Cream
To make this ice cream, you’ll start by scattering some fresh berries on a baking sheet, (I typically use the less-than-perfect berries for recipes like this), drizzle them with a tiny bit of maple syrup or lightly sprinkle with sugar, and pop them in the oven for a while. You don’t need to babysit them, just give them a stir midway through the roasting time.
When the berries have softened and released their juices, you’ll transfer them to the blender along with any juices. Add some milk and puree until smooth. Then just add the remaining ingredients, pulse a few times to combine, and pour the mixture into your ice cream maker.

Strawberry Ice Cream Recipes
Homemade ice cream is about the easiest dessert you can learn to make, and roasting the berries for your next batch of ice cream brings a whole new strawberry ice cream to the table.
As I was writing this recipe out to share with you, I realized that I have a bit of a love affair with strawberry ice cream. It all started with this Fresh Strawberry Ice Cream. It is an old-fashioned favorite made simply with strawberries, sugar, cream, and milk – and full disclosure, it is forever a favorite.
Strawberry Lemonade Ice Cream is a bright lemony ice cream with a strawberry swirl and it is as refreshing as a tall glass of frosty lemonade. Sweet strawberries mingle with crunchy golden Oreos whispering of summer in this lusciously smooth Strawberry Shortcake Ice Cream.
Strawberry Cheesecake Ice Cream is a sweet and tangy combination of smooth, creamy cheesecake ice cream and fresh strawberry swirls. Chocolate Covered Strawberry Ice Cream is an intense strawberry burst of flavor with melting chocolate pieces and a creamy strawberry vanilla base.
Strawberry Crisp Ice Cream begins with a strawberry crisp, with fresh berries tucked in between brown sugar and oat layers and then baked into bubbling golden brown heaven.

To Roast the Strawberries

Preheat the oven to 350°F. Rinse the strawberries and pat dry on a baking sheet lined with paper towels. Slice the larger berries and halve any smaller ones, creating pieces that are all approximately the same size.

Place the berries on the dry baking sheet and drizzle with syrup. Toss to coat evenly. Bake for 20 minutes, remove from the oven and stir, and bake for an additional 10 minutes.
To Make the Ice Cream

Place the roasted strawberries and all the juices in the blender. Add the milk and blend until smooth.

Add the cream, sugar, salt, and vanilla to the blender. Pulse to combine. Pour into an airtight container and refrigerate until well-chilled.

Pour the cold mixture into the ice cream maker and process according to the manufacturer’s instructions. When finished, serve immediately for soft-serve ice cream or transfer to an airtight container and place into the freezer until ready to serve.
