Mediterranean Orzo Salad combines orzo with our favorite mediterranean veggies and a simple fresh dressing. It’s perfect as a meatleass meal or served alongside grilled chicken or grilled shrimp.
Mediterranean Orzo Salad Made Easy
What is Orzo? Orzo is a small rice-shaped pasta. It’s great in soups, as a hot side dish or made into a salad like this Mediterranean version.
- Veggies: Cucumbers, tomatoes, bell pepper, and artichokes
- Bold Flavors: crumbled feta, green or red onion.
You can add or substitute other veggies too, drained garbanzo beans, or fresh spinach leaves.
How to Make Orzo Salad
- Boil: Cook the orzo according to package directions.
- Prep: While the orzo is cooking, prep all of the vegetables (recipe below) and chop the artichokes.
- Assemble: Combine orzo with chopped and sliced veggies and artichoke hearts. Add the dressing and toss to coat.
Dressing For Mediterranean Orzo Salad
The dressing in this recipe is very simple, no need to mix it in a separate bowl, add it to the salad and toss to coat.
You can replace it with any vinaigrette or bottled Greek dressing if you’d prefer.

Cook orzo in salted water according to package directions. Drain well and rinse under cold water. Set aside.

While the pasta is cooking, chop the vegetables. Drain the artichokes well and chop into bite sized pieces.

In a large bowl, combine the orzo, cucumber, tomatoes, bell pepper, and green onions.

Add the dressing ingredients, olive oil, lemon juice, red wine vinegar, dried dill, garlic powder, and salt. Toss well to coat.

Add the feta cheese and parsley if using. Gently toss and refrigerate at least 2 hours before serving.
Dressing can be replaced with ½ cup store bought Greek dressing
