Storing Soup

Store leftover rotisserie chicken soup in a covered container in the refrigerator for up to 4 days. Reheat portions in the microwave or on the stovetop.

Freeze soup in zippered bags for up to 4 months after removing the pasta. Add new pasta to the soup in Step 4 and follow the recipe directions as written.

Rotisserie chicken soup is a warm, comforting dish that’s full of rich, savory flavor and comes together in no time!

In a large soup pot or Dutch oven, melt the butter over medium heat. Add the onion, celery, and carrots and cook until they begin to soften, 3-4 minutes.
Add the flour, garlic powder, sage, and thyme and cook for 2 minutes, stirring occasionally.
Add the broth and water and turn the heat up to medium-high. Bring to a boil.
Once boiling, add the pasta* and reduce the heat to a low boil. Cook until the pasta is tender (this can vary by brand), approximately 7 to 9 minutes.
Stir in the chicken and cook 1 to 2 minutes or until heated through. Taste and season with salt and pepper.

For Planned Leftovers: If you are planning for leftovers, reduce the water to 1 cup in the soup and cook the pasta on the side. Store the pasta and the soup separately and add the pasta to each bowl when serving.
Storage Tip: I strain the broth and store it in a separate container to keep the noodles from getting soggy.
Keep leftover soup in an airtight container in the refrigerator for 4 days and in the freezer for 4 months.
