This recipe can be cut in half or doubled if you’re having a large gathering. Fresh zucchini salad is a great way to use that zucchini in the garden and I always seem to have too much of it. You can add whatever vegetables you like to this salad. We love the bacon it goes great, but you could easily leave it out. Fresh corn and radishes would also be good.
Best To Serve..
We find this salad is best served right away once you add the dressing. If you like, you can cut up the vegetables in advance and refrigerate them. When serving time comes just add the dressing and enjoy.

Tomato Zucchini Salad
Tomato zucchini salad is a wonderful way to use up garden fresh vegetables.. we added bacon and a delicious dressing.
- 1 cup chopped unpeeled zucchini
- 1 large tomato chopped
- 1 cup yellow sweet pepper, chopped (I usually do a combination of yellow, green and red sweet peppers)
- 1/2 cup chopped, peeled cucumber
- 1/2 cup chopped green onion could use regular onion or red onion
- 3 to 4 slices cooked bacon, crumbled (could use ham or leave out the meat completely)
Dressing
- 2 tablespoons olive oil or bacon drippings
- 2 teaspoons white granulated sugar
- 1 tablespoon apple cider vinegar
- 1 teaspoons dried or fresh parsleyv
- 1/4 teaspoon salt
- 1/4 teaspoon dried marjoram
- 1/8 teaspoon black pepper
- 1/2 teaspoon dried basil or can use fresh basil

Combine zucchini, tomato, pepper, cucumber and onion in a bowl. Whisk together the ingredients for the dressing and pour over the salad. Toss so dressing will get on all ingredients.
